Peach Cake Recipe

Ingredients:

  • 250 g all-purpose flour

  • 200 g sugar

  • 125 g butter (at room temperature)

  • 4 eggs

  • 1 teaspoon vanilla extract

  • 2 teaspoons baking powder

  • 125 ml milk

  • 3-4 peaches (fresh or canned, drained, and sliced)

  • Pinch of salt


Instructions:

  1. Preheat the oven:

    • Preheat your oven to 180°C (350°F) and grease a cake pan with butter and flour or line it with parchment paper.

  2. Prepare the batter:

    • In a large bowl, cream the butter and sugar together until light and fluffy.

    • Add the eggs one by one, beating well after each addition. Stir in the vanilla extract.

  3. Incorporate the dry ingredients:

    • In another bowl, whisk together the flour, baking powder, and salt.

    • Gradually add the dry ingredients to the butter and egg mixture, alternating with the milk. Mix until just combined.

  4. Add the peaches:

    • Place some peach slices at the bottom of the cake pan so they caramelize as the cake bakes. Then, pour half of the batter over the peaches.

    • Add more peach slices on top of the batter, then pour the remaining batter over them.

  5. Bake:

    • Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

    • If the peaches on top start browning too quickly, cover the cake with aluminum foil during the last 10-15 minutes of baking.

  6. Cool and serve:

    • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

    • You can dust it with powdered sugar or serve it with whipped cream.


Enjoy with a cup of tea or coffee. It works wonderfully with either fresh or canned peaches, and you can experiment by adding a pinch of cinnamon or nutmeg for extra warmth.
