Peach Cake Recipe

Ingredients:
250 g all-purpose flour
200 g sugar
125 g butter (at room temperature)
4 eggs
1 teaspoon vanilla extract
2 teaspoons baking powder
125 ml milk
3-4 peaches (fresh or canned, drained, and sliced)
Pinch of salt
Instructions:
Preheat the oven:
Preheat your oven to 180°C (350°F) and grease a cake pan with butter and flour or line it with parchment paper.
Prepare the batter:
In a large bowl, cream the butter and sugar together until light and fluffy.
Add the eggs one by one, beating well after each addition. Stir in the vanilla extract.
Incorporate the dry ingredients:
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter and egg mixture, alternating with the milk. Mix until just combined.
Add the peaches:
Place some peach slices at the bottom of the cake pan so they caramelize as the cake bakes. Then, pour half of the batter over the peaches.
Add more peach slices on top of the batter, then pour the remaining batter over them.
Bake:
Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
If the peaches on top start browning too quickly, cover the cake with aluminum foil during the last 10-15 minutes of baking.
Cool and serve:
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
You can dust it with powdered sugar or serve it with whipped cream.
Enjoy with a cup of tea or coffee. It works wonderfully with either fresh or canned peaches, and you can experiment by adding a pinch of cinnamon or nutmeg for extra warmth.
